It's Monday. You don't want to cook. Here's what you're making tonight!This is my go to recipe when I have to make something, but I need it to be as quick and easy as possible. I keep all of these ingredients on hand, so it's ready at a moments notice.

I call it "Pasta with Sausage, Tomatoes, and Artichoke Hearts" (Very original...I know!)

  • 1 T. Olive Oil
  • 1/2 C. Sundried Tomatoes
  • 1 lb. Mild or Spicy Italian Sausage
  • 1 can of Artichoke Hearts
  • 1 clove of Garlic minced
  • 1 1/4 C. Chicken Stock
  • 1 pkg Penne Pasta
  • Parmesan Cheese on top
  • Fresh Basil & Italian Parsley
  • Salt & Pepper to taste

Cook pasta. Meanwhile, heat olive oil over medium high heat. Cook sausage and remove. Add artichokes and garlic to the same pan and cook for 2 min. Add stock and sundried tomatoes, cook for 8 minutes. Add sausage and pasta back to the pan and toss. Salt and Pepper to taste. Top with parmesan, basil and parsley.
