On a cold rainy day like today, this soup is the best!

My mom made this soup all the time when I was growing up, and it's still my very favorite! I don't usually give out the recipe, because it's my little family secret, so consider yourself family!

Here's the recipes for both the soup and the meatballs. The meatballs are key, it just isn't the same without it.

Minestrone Soup

  • 8 cups of chicken broth
  • 1 can of petite diced tomatoes
  • 1 clove of minced garlic
  • 2 medium carrots, peeled and diced
  • 1 medium onion chopped
  • 1 cup of uncooked macaroni
  • 1 tbs. parsley
  • 1 tsp. salt
  • 1/8 tsp dried basil or Italian seasoning
  • 1 can of green beans
  • 2 small zucchinis cut up
  • 1 can of garbanzo beans
  • 1 can of red kidney beans
  • Parmesan cheese

Cook onion, garlic,  and carrots. Add chicken broth, tomatoes, beans, zucchini, spices, and macaroni. Simmer 10-15 minutes. Serve over meatballs and top with Parmesan cheese! Enjoy!

Meatballs

  • 1/2 lb ground beef
  • 1/2 lb Italian sausage (mild or hot depending on what you like)
  • 3/4 c. of Italian dry bread crumbs
  • 1/2 small onion
  • 1 egg
  • splash of milk
  • salt & pepper to taste

Mix with your hands. Form meatballs and bake at 350 for 15-20 minutes depending on the size of your meatballs.

p.s. This recipe makes enough to make spaghetti and meatballs the next night!
