Do you grab tacos, burgers, or maybe even a candy bar on your lunch break? I did too... but here's a super simple lunch you can make on Sunday's and it lasts 4 days!!

I've been on a mission to be better to myself lately. Better to my body, better to my soul, and easier on myself.

When it comes to eating healthier, I've found for me it's simply about two things.

1. Having lots of healthy options around the house.

2. Planning ahead and prepping healthy meals to take to work.

#2 is where this recipe comes in. So good, so easy and so good for you.

Healthy Burrito Bowls for 4 Days

Ingredients:

3 boneless, skinless chicken breasts

3 bell peppers (red, yellow, and orange)

1/2 of a red onion

1 jar of salsa

Optional:

Rice (brown is best)

black beans

corn

cheese

avocado

lime

cilantro

(I've been trying to cut way back on my carbs, so I am going to kick out the rice...but even without it you still get lots of flavor. If you're really trying to cut back on carbs, minus the black beans and corn too. Instead add avocado. I promise it will still be super yummy!)

Directions:

Line a baking sheet with foil (for easy clean up)

Place 3 chicken breasts, 3 sliced peppers, and sliced red onion on the sheet as show in the picture above.

Drizzle with olive oil, then salt and pepper the whole sheet

Sprinkle a tablespoon of taco seasoning on the chicken

Top the chicken with salsa (jarred or homemade)

Bake at 400 degrees for 25 minutes

Assemble:

Put rice in the bottom of 4 tupperware dishes if you are using rice.

Cut up chicken and top rice with chicken, peppers, onion, and any other ingredients you want like black beans, corn, cheese, cilantro and lime.

Put in the fridge and there you go! You have a healthy lunch ready to go for 4 days!!
