This dinner is super easy and everyone in my family loved it! Win, Win!

Dinner is always a battle at my house. I love to cook, but I can't find the time. I have one child who is insanely picky, another child who isn't overly picky, but doesn't like spice of any kind and she pretty much only wants to eat when she wants to eat. So, I'm always on the look out for something fast, yummy, at least kind of healthy, and something that everyone will always eat.

I put this together the other night. It took about 15 minutes, everyone loved it and that makes me one happy Mama! I'll call it ...

Penne Pasta with Chicken Meatballs and Simple Alfredo

(First off, this is definitely semi-homemade. I found the chicken meatballs in the "deli" section at Costco.)

They were about $13, enough for two meals for my family of four, so it seemed reasonable to me if they'd eat them!! (My daughter loves meatballs so I thought there might be a chance!)

You pop the meatballs in the oven for about 18 minutes and viola delicious chicken meatballs!

As the meatballs cooked, I cooked up some penne pasta. (I'm a fan of short pasta for kids. I rarely cook spaghetti because it's just too messy!)

I didn't want to pair it with marinara, because we eat a lot of red sauce around here, so I found this simple Alfredo by Martha Stewart. I always trust a Martha Stewart or Ina Garten recipe.)

It's butter, fresh parmesan cheese, salt, and pasta water.... so easy and honestly it was really good!

Melt the sauce into the warm drained pasta, top with the meatballs and if you have some fresh basil on hand I think it makes everything yummier and a little bit fancy!
