Have you made the New Year's Resolution to eat better?  So.  About 80% of the time I eat Paleo.  What is Paleo?

Think caveman.  It's designed to emulate what our ancestors ate.  Plants, animals, fruit, nuts...etc.  Avoiding processed foods and those with refined sugars and dairy and the such.  I read somewhere today that the Paleo Diet was considered one of the worst because it wasn't easily sustainable or easy to navigate.  For me.  It is.  I just make a rule not to eat anything with ingredients that I can't pronounce.  It is for me.  It may not be for you BUT I was super proud of the recipe I made up today for lunch and wanted to share it with you!

Mango Enchilada Chicken Salad (measurements not exact)

Chopped Mango (see video below on how to cut the very, very difficult to cut mango - I had to YouTube it my first time!)

Diced Chicken in homemade enchilada sauce (sauce recipe below)

Cherry Tomatoes

Celery

Cucumbers

Cashews

Jalapeños

Chopped Romaine and Spinach

For The Sauce: 2 tbsp coconut oil, 2 tsp coconut flour, 1/4 c chili powder, about 1.5 c of chicken stock, 1 can of tomato paste, 1 tsp of dried oregano, 1 tsp of ground cumin, 1/2 tsp of salt, 1-2 cloves of garlic, and 2-3 oz of love.   I put it in the Magic Bullet and it came out spectacular!

Now to the cutting of the mango.  Worst fruit ever to cut.
